Simplest of All Cakes

Ingredients

  • 5.5oz (155g) Margerine
  • 8oz (225g) Sugar
  • 225ml Milk
  • 4 eggs
  • 11oz (310g) Flour
  • 6 tsp baking powder (converted from 3 heaped tsp)
  • 2.5 tblspn of Cocoa (or Vanilla Essence) (converted from 2 heaped dstspn)

Method

  1. Preheat oven to 350F (180C)
  2. Grease two 8" (20cm) cake tins
  3. Cream the margerine and sugar in a large mixing bowl until light anf fluffy
  4. Add one egg at a time followed by a spoonful of flour mixing as you go.
  5. Add milk, balance of flour, baking powder and flavouring.
  6. Mix well
  7. Pour the mixture into greased baking tins
  8. Bake for 25 to 30 minutes (until a knitting needle comes out clean after being inserted)
