Sago/Tapioca Pudding
Ingredients
- 0.5 cup Sago / Tapioca
- 2 eggs
- 500ml milk
- 0.5 cup sugar
- 0.5 tsp salt
- 1 tsp Vanilla essence
Method
- Soak Tapioca overnight in water
- Preheat oven to 180C
- Warm the milk in a saucepan
- Stir in the Tapioca and remove from the stove
- Beat the egg yolks with sugar and salt
- Gradually add the milk mixture to the egg mixture beating all the time
- Beat the egg whites until stiff and fold into the milk and sago
- Stir in the vanilla
- Pour into an oven proof dish
- Bake until set (approx. 40mins)
