Sago/Tapioca Pudding

Ingredients

  • 0.5 cup Sago / Tapioca
  • 2 eggs
  • 500ml milk
  • 0.5 cup sugar
  • 0.5 tsp salt
  • 1 tsp Vanilla essence

Method

  1. Soak Tapioca overnight in water
  2. Preheat oven to 180C
  3. Warm the milk in a saucepan
  4. Stir in the Tapioca and remove from the stove
  5. Beat the egg yolks with sugar and salt
  6. Gradually add the milk mixture to the egg mixture beating all the time
  7. Beat the egg whites until stiff and fold into the milk and sago
  8. Stir in the vanilla
  9. Pour into an oven proof dish
  10. Bake until set (approx. 40mins)
