Lemon Meringue Pie

Ingredients

  • 6 oz (170g) Flour
  • 1 oz (28g) Sugar
  • 3 oz (85g) Margerine
  • pinch of salt
  • 1 tin condensed milk
  • 0.5 cups lemon juice
  • 2 eggs
  • 4 oz (114g) Caster Sugar

Method

Base

  1. Pre-heat oven to 350F (180C)
  2. Melt the margerine
  3. Mix the flour, sugar, pinch of salt and margerine together
  4. Grease a pie dish
  5. Press the mixture into the dish forming a pie base
  6. Bake for about 10min
  7. leave to cool
  8. Turn oven down to 300F (150C) for final step.

Filling

  1. Separate the eggs. Yolks in one bowl and whites in another
  2. Mix the condensed milk, lemon juice and egg yolks together
  3. Add the filling to the cooled base

Meringue

  1. Beat the egg whites until stiff
  2. Add half the Caster Sugar and mix well
  3. Then slowly add the rest of the sugar
  4. Spread evenly over the filling

The Pie

  1. Bake the completed Lemon Meringue Pie at 300F (150C) for about 10min. Until slightly browned.
