Lemon Meringue Pie
Ingredients
- 6 oz (170g) Flour
- 1 oz (28g) Sugar
- 3 oz (85g) Margerine
- pinch of salt
- 1 tin condensed milk
- 0.5 cups lemon juice
- 2 eggs
- 4 oz (114g) Caster Sugar
Method
Base
- Pre-heat oven to 350F (180C)
- Melt the margerine
- Mix the flour, sugar, pinch of salt and margerine together
- Grease a pie dish
- Press the mixture into the dish forming a pie base
- Bake for about 10min
- leave to cool
- Turn oven down to 300F (150C) for final step.
Filling
- Separate the eggs. Yolks in one bowl and whites in another
- Mix the condensed milk, lemon juice and egg yolks together
- Add the filling to the cooled base
Meringue
- Beat the egg whites until stiff
- Add half the Caster Sugar and mix well
- Then slowly add the rest of the sugar
- Spread evenly over the filling
The Pie
- Bake the completed Lemon Meringue Pie at 300F (150C) for about 10min. Until slightly browned.
