Lemon Curd

Ingredients

  • 2 lemons
  • 60g butter
  • 300ml white sugar
  • 2 eggs

Method

  1. Clean jar/jars to contain approximately 500ml of curd.
  2. Finely grate rind of one lemon
  3. Juice two lemons
  4. Beat the eggs in a small bowl
  5. Melt butter in a saucepan on low heat
  6. Add sugar, beaten eggs, lemon rind and lemon juice to the butter
  7. Cook over a gentle heat stirring all the time until the curd thickens. DO NOT BOIL. The curd thickens further when cooling.
  8. Pour into a clean jar with lid
  9. Store in fridge.
