Lemon Curd
Ingredients
- 2 lemons
- 60g butter
- 300ml white sugar
- 2 eggs
Method
- Clean jar/jars to contain approximately 500ml of curd.
- Finely grate rind of one lemon
- Juice two lemons
- Beat the eggs in a small bowl
- Melt butter in a saucepan on low heat
- Add sugar, beaten eggs, lemon rind and lemon juice to the butter
- Cook over a gentle heat stirring all the time until the curd thickens. DO NOT BOIL. The curd thickens further when cooling.
- Pour into a clean jar with lid
- Store in fridge.
