Eggnog

Ingredients

  • 6 eggs
  • 1tsp vanilla bean paste
  • 1 cup caster sugar
  • 1/8 tsp salt
  • ground nutmeg
  • 3 cups milk
  • 300ml thickened cream

Method

  1. Separate eggs
  2. Bring a saucepan of water to the simmer
  3. Put a bowl over the simmering water
  4. Add the egg yolks, half the sugar, the vanilla and the salt to the bowl and whisk for 5 mins
  5. Beat the egg whites and remaining sugar
  6. Pour the egg whites into the other mixture whisking to combine
  7. Beat the cream and stir it into the eggnog
  8. Add nutmeg to mixture (you may choose to add nutmeg only when serving)
  9. Place in fridge and serve cold with sprinkle of nutmeg.
