Eggnog
Ingredients
- 6 eggs
- 1tsp vanilla bean paste
- 1 cup caster sugar
- 1/8 tsp salt
- ground nutmeg
- 3 cups milk
- 300ml thickened cream
Method
- Separate eggs
- Bring a saucepan of water to the simmer
- Put a bowl over the simmering water
- Add the egg yolks, half the sugar, the vanilla and the salt to the bowl and whisk for 5 mins
- Beat the egg whites and remaining sugar
- Pour the egg whites into the other mixture whisking to combine
- Beat the cream and stir it into the eggnog
- Add nutmeg to mixture (you may choose to add nutmeg only when serving)
- Place in fridge and serve cold with sprinkle of nutmeg.
