Banana Bread

Ingredients

  • 4 oz (115g) margerine
  • 8 oz (230g) sugar
  • 2 eggs
  • 1 cup mashed, ripe bananas
  • 1 tsp lemon juice
  • 3 tsp baking powder
  • 1/2 tsp salt

Method

  1. Pre-heat oven to 180C
  2. Cream the margerine and sugar in a bowl
  3. Beat the eggs in another bowl before adding them to the creamed margerine mixture
  4. Mix in the mashed bananas and lemon juice
  5. Add the flour, baking powder and salt; mix well
  6. Transfer ingredients to a well greased loaf tin and bake for 1 hour.
